August Daring Cooks' Challenge

July's challenge was hosted by Olga of Las Cosas de Olga and Olga's Recipes. She challenged us with Jose Andres' recipe, Rice With Mushrooms, Cuttlefish, and Artichokes from the show Made In Spain. Here is a video clip of Jose Andres explaining the recipe:




This was probably my favorite challenge thus far as a member of the Daring Kitchen. This recipe is right up my alley--fresh and succulent tomatoes and mushrooms and green peppers, garlic, herbs. Plus, need I mention the tantalizing aroma of the aforementioned ingredients as it wafts from a simmering pan? Though much simpler than last month's challenge, I can actually foresee myself making this again.

My few alterations included:
  • replacing the cuttlefish with chicken
  • using an on-hand seasoning instead of the saffron
  • replacing the white wine with a small glass of an apple juice/lemon juice blend
  • I didn't make the alioli at all--I just knew I wouldn't have the hand strength; with university exams coming up, I couldn't risk it.
I was very pleased with the outcome of this flavorful dish. I recommend it because 1) it is pretty healthy, 2) it is inexpensive and 3) it is delicious. Here are my photos from the challenge. I'm sad to say my pictures aren't so great this time around and do no justice to the dish. Love that you supplied us readers with the vid on how HE makes this dish! I'll be referring to it in the future! Your dish came out gorgeous, so colorful, and I love that you used chicken! Great job, Lindsay - as always!

I think this was my favorite challenge so far too. I also used chicken and think it worked well in this dish. Your photos are lovely as usual and good luck on upcoming exams.
